We have been doing leftover buffets forever, not joking😀 and we mostly have them on the weekend. If you don't have enough leftover food, you can always cook up some eggs and toast or sausages that were in the freezer to put with it. However, for us, we usually have a lot of food left (unless we take leftovers for lunch at work/school) and have a nice filling lunch, usually with lots of variety!
That's another thing you could do, take in leftovers for your lunch at school/work. If you're not too picky it would probably be rather cold but it still tastes nice!
What my mum does is - when we have lots of vegetables or something - she always adds them to soup or pasta sauces and for the soup, she whizzes it up, so you have no idea what's in it! Also, if we buy some cool vegetable to work with, we look online for some recipes to use it with, and they don't have to be hard!
It is said that one third of food produced for humans in the world - about 1.3 billion tonnes - gets lost or wasted every year. If you're making sure that you're finishing your food and not throwing it away (unless it's moldy) than we could make that huge number go down. Remember, there are people out there that would treasure their leftovers😟.
